Pancakes for Supper

We had a wonderful day at the zoo for Zoe’s third birthday. They ran from one exhibit to the next laughing and jumping with excitement. Mostly Zoe talked about snack times, lunches, and what we were going to have for supper that night. Bless her heart, you’d think I never feed the child!

 

When we got home yesterday we let the kids swim in the baby pool on the deck while I made her favorite…whole wheat buttermilk pancakes. AMAZING! They are so light that we usually end up  eating 4 a piece, except my husband. We won’t even go into how many disappear off his plate! Here is the recipe for all family and friends.

In large bowl whisk together:

-1 1/2 cup ground whole wheat flour

-3 tbs brown sugar

-1 3/4 tsp baking powder

-3/4 tsp baking soda

-dash of cinnamon

– dash of nutmeg

In separate bowl mix:

-1 1/4 cup cream

-1/4 cup lemon juice

Let this mixture sit for 5 minutes

Then slowly add:

-3tbs extra virgin olive oil

-2 large eggs

-1 1/2 tsp vanilla

Mix well then add slowly to dry. (Don’t over mix)

Butter up your skillet, cook, and enjoy!

Homeschooling

I just can’t say enough wonderful things about it! I am so thrilled by the progress Willow is making. Yesterday she started writing words for the first time by sounding them out. Her first word she wrote by herself was, dog. Earlier that morning she was even doing simple addition! I say all of this not to brag but to shout out to everyone how awesome this is and they can do it too!

 

The beauty of all this, is she is catching on because she is interested and has that natural love for learning already. The rush I get from watching something, “click,” in her mind is amazing. Public school sucks all the fun and life out.

 

Zoe is right behind her soaking in everything she hears us talk about. The quality of getting your education from real life and curiosity far surpasses any deadline of test taking. Now if only I can talk everyone I know with kids into doing the same thing. My passion for this grows by the day. I am so thankful the way God spoke to Tim and I to do this.

 

Supper time

My Aunt Debbie came over this evening with food from one of my favorite restaurants, South 21. The trout was so good, it had been so long since I had some.

 

It was an interesting dinner to say the least. First off, when Debbie walked in the door my children acted as though I haven’t fed them all day. They were grabbing her bags of food and yelling, ” What’s that?? I want some!!” So in a frantic rush I grab plates, start to cut up food to cool, and put Ty in the high chair with a distraction of puffs.

 

Finally, we can eat. I take a few bites when Zoe gets a speck of water on her dress. She immediately wants to take it off. Shorty after that she has to pee and wants my help. As I’m done helping her I see Ty grinning ear to ear while diarrhea leaks from the high chair to the floor. No lie… I told Debbie not to judge me and that I was gonna finish my food before I cleaned him up! Oh what a hungry Momma will do! ,Bout that time Zoe spilled her cup of water everywhere all while Willow is sneaking food off everyone’s plate!

 

The biggest part of me wanted to scream,”Can’t I just eat my stinking trout?!” But God’s grace was sufficient and I started to laugh. I know Debbie enjoyed the entertainment as always, she makes it that much easier to laugh.
